Does anyone know how to wire up any of the scooters using a cheap after market control?

If you want to use your existing lights, you'll need to see if your controller has an output for lighting and what voltage it supplies. For example, some are putting out the same voltage as it does for the motor...so 36v for both. In that case you'd probably have to wire in a buck converter to reduce the voltage to the 5v-12v you likely require.

An easier way might be to add new lights that run off 36v. I bought these (linked below) and wired them directly to the battery. They are definitely overkill, but you can't miss me at night.
